STEAM-POWERED HIGH PERFORMANCE

Mix-Matic S is the universal high-pressure steam-heated cooking pan ideal for producing soups, sauces, ragouts, fillings, béchamel sauces, goulash and stews, and for sautéing meat and vegetables. In view of its rapid heating even at full load (20° to 165°C in just 15 minutes), it is the ideal appliance for delicatessens, pasta-makers, industrial food processing plants and large catering firms. The distinctive hemispherical wok shape, the programmable mixing system, and the precise temperature control, make Mix-Matic S a machine which can both boil, like a boiling pan, and sauté, like a braising pan.
The exclusive mixing system, which can be programmed for continuous, pulsed or reverse operation, amalgamates all ingredients to perfection, prevents food from sticking to the pan and enables uniform cooking.
Mix-Matic S is produced in three models with capacities of 150, 250 and 500 litres, all heated by high pressure (8 bar) steam. After cooking, the product may be pumped out through the discharging valve the machine is equipped with, or thanks to the automatic tilting pan. Lid lifting is also automatic.
Fully programmable, Mix-Matic S is equipped with electromechanical controls as a standard, or with a full touch screen PLC upon request. The latter system cannot only programme all the functions of the appliance, but also manage and save recipes and provide a complete HACCP control. This version can also be supplemented with the Nilma CCMP interactive software, enabling the uploading and downloading of recipes and cooking parameters, the full traceability of all ingredients and the appliance diagnostics, as well as the remote control of the operations via smartphone.
